High VM CPU Usage when low host CPU usage

Hello,

Every once in a while my VMs will go off the deep in and use a ton of CPU usage, when I log in and review the alert, I see there's plenty of extra CPU usage available on the host. What causes this oddity? Do I need to add another core? I have no reservation set for the server, but at the same time I have it set to unlimited usage as well.

Attached are shots of the VM usage as well as the host usage. What should I be looking at?
